I want to buy SSD (I need fast space now) but I have old Maximus VII Hero board. I will be making new modern build at end of 2022 when 4-series of GeForce will hit so I also want this SSD to "pass" to new build.

I heard I can buy some sort of adapter and then buy modern SSD for PCIe to work with my old board. Could someone tell a casual like me what kind adapter is that and which one I should buy? And will running that adapter impact any other hardware in my build? Also - this SSD is not for system so it should be just plug adapter, plug SSD and should be good?

My full spec is VII Hero (3201 bios, last stable), GF 1080Ti, i7-5775C, 16GB RAM

You shouldn't bother with an M.2 SSD for that platform;
Instead I'd advise to either stick with a 2.5" SSD or none thereof, save the funds and invest it when you're going for a new platform.
