Question Lower fps in Minecraft than I should be getting

I am currently experiencing an issue on minecraft where my frames are much lower than they should be on my mid-to-high end pc. On other games I play, I am able to get 165 fps easily which is what my monitor refresh rate is. On minecraft I cannot even manage that even on the lowest settings and at 15 chunks render distance. When I look at videos of others running the same cpu and gpu on minecraft, they are capable of running on max settings past 1000 fps and running shaders past 100 fps (example videos attached). I have also attached a video of my problem which shows my frame rate when flying around on lowest and highest settings. I don't know how to solve this problem and any assistance would be greatly appreciated.

Specs: RTX 2070 Super, Ryzen 5 3600, 16 gb 3000 mhz ram, 970 EVO Plus 500 gb

Cinebench Score link (google doc because it won't let me insert a screen shot for some reason):

Ok so do you have RTX on? That really hurts performance. Try to open up task manager and see is yout GPU actually being used? Also, is your monitor connected to the card or the motherboard? If yes tgen connect it to the card

  1. I don't have RTX on because in order to enable that I would have to download and install forge as well as optifine and enable specific shaders, all things that I haven't done. I don't think there is any universal RTX setting
  2. My gpu is definitely being used as it performs totally fine in other games such as Rainbow Six Siege, just not Minecraft
  3. My monitor is connected directly to my gpu through DP
