I have a MacBook Air M2 running MacOS Ventura.

I currently have this docking station: https://www.jbhifi.com.au/products/alogic-universal-twin-hd-pro-docking-station. I have downloaded the DisplayLink software onto my MacBook and restarted the device numerous times; yet is it not connecting to my docking station or 2 monitors with the provided USB-C cable. However, I have tested numerous Windows laptops with this set-up and they work fine.

Any advice will be greatly appreciated!

You would need to check with the manufacturer if DisplayLink works - although it should as a reviewer had success with it. I am using a Dell Docking Station and my MBP M2 is able to output to 3 displays successfully using the DisplayLink software.
Are you sure you have launched the software and enabled your displays through its settings?
