There are some practical benefits to selling and saccing the gold, as
other people have noted, but I don't know if there's a greater value
assigned to your sacrifice one way or the other. I generally assume the
shopkeeper is not going to give my PC full value for the weapon (I
*never* work on my Haggle skill, it's a bad habit), so the gold I get
might not be quite as valuable as the artifact I had, and then sell the
artifact anyway. After the Casino I can get it back if I want to, and I
like collecting nifty stuff in the game.
That said, in the case where your god will value one sacrifice over the
other--dwarven gods prefer gold, and human gods prefer tools (like the
si)--I generally try to sacrifice the god's preferred offering.
