Memory Help - New Build

So, I was looking at building a new PC for gaming and decided to go with this listed below:

Motherboard: (ASrock Z370 Killer) https://www.newegg.com/Product/Product.aspx?Item=N82E16813157790
RAM: T-Force 2 x 16 GB DDR4 3200 https://www.newegg.com/Product/Product.aspx?Item=N82E16820313851
CPU: 8th gen i5-8600

When I look on the link I provided for the motherboard, the board says that it can handle up to 4266+ (OC) which is I am assuming overclocking through some settings. Although, it says below this that 8th GEN intel CPU's support DDR4 up to 2666.

Now: Does that mean "8th gen intel CPU's """reliably""" support DDR4 up to 2666, or should I simply not buy memory above 2666? If I can buy memory above 2666, can anyone give me a quick walk through on how I would configure my new PC to run at the 3200 mhz?

I notice on my current PC i have memory thats meant to run at 1866 mhz, yet in bios its stuck to 1600 mhz and if i change it from 1600 mhz to 1866 in bios the PC literally wont load. So I want to figure this stuff out before I continue.

So you are saying that the CPU/Motherboard and Ram I listed would all work perfectly fine? If I overlock the RAM past what the CPU supports but under what the mobo supports it wont have issues? If that is the case great, but I am still unsure of how to configure my PC to make the ram act as advertised at 3200 mhz. Generally from my experience ram doesn't load at the speed you want and I am not sure how to do it.
