Mining rig to Gaming Rig

I have a mining RIG, consisting of:
ASROCK Fatal1ty B250 Gaming K4

6 of EVGA GeForce GTX 1060 6GB FTW GAMING ACX 3.0, 6GB GDDR5, LED, DX12 OSD Support (PXOC) Graphics Card 06G-P4-6268-KR

A beautiful CORSAIR HXi Series, HX1200i, 1200 Watt, 80+ Platinum Certified

A 120 GB sandisc ssd

And 2x4 GB RAM HyperX Kingston

My question is how to transform this into a decent gaming rig?
Should I just build it around the b250 and gtx1060 or should I just sell everything but a 1060 and build around a ryzen 5 2600?
I'm not quite sure what would it be best.

The processor it's a crappy Celeron, a Intel BX80677G3930 7th Gen Celeron.
I would maintain 1 gtx 1060, I guess is enough for playing Overwatch, Apex, CS GO and Anthem with good graphics.
But I'm not sure what's better to do.
I suppose that I would need to figure first what's the optimal processor to install in the b250 (but since it only supports up to 7th generation it will be expensive) and then compare vs something mod range like the build Linus tech recommends at the end of 2018 which is based around the ryzen 5 2600.
 


I guess since 960 could do SLI I assumed 1060 can. You could even do 950 in SLI.
