I was planning on building my own PC so I just want to ask if the MSI GTX 1080Ti Gaming X 11G compatible in the MSI z270 Pro Carbon?

Yes.

If you look at the specs, you can see the GPU has a "PCI-e 3.0 x16" interface. That corresponds with the motherboard's listed slots of 3x PCI-e 3.0 x1, 3x PCI-e 3.0 x16.
