Is there any real advantage that justifies the difference in price? I heard the carbon one has some plastic-carbon fibers, does that help anything? should i pay th extra 15 € for carbon?

I think at this moment it's more about the looks of your motherboard. It's really up to you. Though the carbon has one more PCIE port and one more M.2 slot that then Pro one.
The carbon has nog VGA port onboard and the pro does have that.
There are some other small differences.

When making these decisions I always just pay the few extra bucks since your investing money into the product worth more than the price diffrence. Whats the worst that can happen you paid 15 bucks for no reason with a possible upside not to big of a gamble to me

I looked at the specs and it says both have M.2 slots.
What do u mean by that VGA ports?
the difference i saw is that carbon has some kindd of optical audio port, . Audio Boost 4 with Nahimic 2
DDR4 Boost with Steel Armor (whatever that means)
and it has more lighting inside

The carbon Motherbaord has one more M.2 slot, they both have them though. VGA port a little older analog way of connecting your screen to your computer, but as long as you ave a graphics card you'll not miss it since you'll use the ports on the graphics card.
The steel armor thing means it's stronger and less likely to break... Though the chance of a slot breaking of is rather small.
I don't really know if the audio differs that much on the 2 boards, I think the quality is about the same. Here an article about the optical audio port: https://www.howtogeek.com/241828/what-is-the-optical-audio-port-and-when-should-i-use-it/
I think you won't use it anyways, but you could still take a look.

Bt look, they both have 2 m.2 ports and non of them has VGA, but DVI-D

However, Caron does have - 1 x Chassis Intrusion connector and
- 1 x Serial port connector. What does that mean?
