My specs are:

Prime B450M-A

Ryzen 5 3600x

Radeon 580 8gb

2 x 1tb seagate hard drives
1 x 126ssd

Thermaltake smart 600w

My problem is that games run perfectly fine at the start, but if I switch to another game that games just lags.

For example I start up my computer and then I play csgo with 300 fps then when I switch to a game like genshin impact it starts to lag, but if I started playing genshin impact first my genshin impact does not lag and runs smooth. So it seems my first game always runs smooth but when I switch to a game for someone reason that game always lags. Any Help?

Some programs/ games don't release memory or other resources when stopped. Check Task manager what's holding it up.
