Need advice building; Budget about 3k+

Honestly looking for others input.. Probably ordering/building within a month, unless I should wait for something coming out soon that is much better then what I'm currently ordering. Budget is $3,200ish.. but doesn't have to be that much. Main uses of the PC will be Gaming/Video Editing/Normal everyday use. I already have a 27 inch samsung monitor which is why I didn't add that to my list, contemplating doing eyefinity with 40+" monitors but not sure yet.

Edit: currently have a decent keyboard and razer naga mouse... however if somebody could recommend a great gaming keyboard it would be greatly appreciated.

I personally would go with Ultimate version because of languages that I need to run. If it wasn't for that I'd definitely go with Home version to save some money. It looks like he has enough money to spend.
Case: Not something I'd get, but that's up to you. You're the one that has to look at it.
Power Supply: Why? This Antec 900 watt PSU should be more than enough for your system even with 2xGTX580s and for $110 less.
Graphic Cards: Your call.
RAM: No problems here.
CPU: Again, no problems here.
Motherboard: Explain to me exactly why you need a $335 motherboard. What does this board offer that this $150 motherboard doesn't offer?
Hard Drives: You're going with a motherboard that has multiple SATA 6.0Gb/s ports. Why are you looking at SATA 3.0Gb/s hard drives? Western Digital Caviar Black 1TB SATA 6.0Gb/s Hard Drives
SSD: I'd probably look at the 80GB drives. I've been running an 80GB OS drive for almost a year and haven't run out of space.
CD/DVD/BR: No problems
OS: Give me a good reason for Professional over Home Premium.

Overall, it looks like a waste of money to me (but it's your money). You could probably get about 95% of the performance of this system with about 2/3rds of the cost of this system.

Case: Isn't final, I just sorta like the look.. not sure yet.
Power Supply: I suppose I could go lower, is there any reason to have 900W+?
Motherboard: HA, I'm not really sure, it was a combo but I see your point.
OS: Whats the differences between Home, Professional, and Ultimate?

Honestly I'm looking for help so I can build a computer with absolute max performance. I appreciate the comments wolf.

SSD
The Kingston HyperX SSD is a great choice, one of the faster ones available right now.

CPU Cooler
This one is considered by many to be the king of the hill for air cooling, so I would recommend this one:

OS
Go with Windows 7 Home Premium 64-bit. As far as I am aware, the major benefits of Professional are better networking features and support for more RAM (32GB max vs. 16GB max for Home Premium).

Motherboard
Yea you can save some money here if you don't need to go with that particular board. I would generally stick in the $180-$240 range, from Asus, Gigabyte, MSI, or ASRock. Here are a couple options:
