Need Advice for Monitor - Network Interface

I have a good desktop that I use as a sort-of base station in my house. I use laptops and tablets around the house to access some desktop applications, using Splashtop software via wifi or home network ethernet. A good example is that I have Blue Iris video software running on the desktop and I can view my video cameras on the laptops and tablets that way. Now, I want to put a wall-mounted touch-screen monitor in the kitchen, that can run Splashtop. I want a screen of 20-22 inches so I can't just use a tablet or hybrid laptop mounted to the wall (they aren't big enough). discusses an "HDMI over IP extender." But since the monitor wouldn't be able to run Splashtop, I'm not sure how what I want to do can be done.
Any suggestions?
