I currently have a build with an i3 7100 with a recently bought GTX 1070 FE. Some games I have been able to run at max and others stuttering and frame drops have occured. I know that my processor is bottlenecking my cpu due to the fact that it’s running at 100% and my gpu usage fluctuating in CPU intensive games. I was thinking of either buying and dropping in an i7 6600k/ 7700k or completely buying a new motherboard and switching over to a Ryzen 1700 or 1700x. What would be a better choice?

Current Build:
CPU: i3 7100 3.9 Ghz
GPU: GTX 1070 FE
RAM: Hyper X DDR4 2133 Mhz
(2 x 4 GB)
Motherboard: MSI B250M MORTAR
PSU: EVGA 500w

Build I’m thinking about getting:
CPU: Ryzen 1700
GPU: GTX 1070 (Possibly SLI in future?)
RAM: Corsair Vengence 3100 Mhz
(2 x 8 GB)
Motherboard: MSI X370 SLI PLUS
PSU: Corsair CX750

I’m looking to have a PC that won’t need upgrading for some years and my ideas are building a new system or just dropping in a new processor in my current build, any suggestions as for what parts need upgrading/changing or any new builds would be greatly appreciated! Thank you.

Solution
Since you are planning this for gaming, you should rather retain that board and get a 7700/7700k(better) for the clock speed advantage, which is still preferred by most games. The prices are around the same range depending on the location, and you save the cost of the board as well.
Rest of your parts dont need any major changes. Add another 8gb of RAM or throw in a SSD maybe for better performance, if you do not have one already.

Oh okay, thank you. Looks like I’m gonna be taking your suggestion. :) One question also?, my RAM is 2133 MHZ, do you think it’s worth to replace them with 3100 mhz sticks? I’ve seen benchmarks in which they can add a decent amount of frames.

A few frames maybe. Not justified for the extra price you pay for discarding the existing kit, unless you can sell them at a decent price. Gaming does not take much advantage in terms of higher RAM speed.
Besides, the b250 platform has a locked capacity of 2400mhz. So even if you get 3100mhz, it will scale down to 2400mhz operating speed. So basically you will be going from 2133 to 2400.
