[SOLVED] Need help getting a new motherboard and CPU combo

I need some help with upgrades for my PC and a build for my daughter. Looking at all the newer CPU's coming out Im having so much trouble differentiating what is best and how to future proof. So much has changed in the PC space since I built my first PC in 2015 and I feel so lost! This is not my first build but i did have some help picking out my current parts and putting it all together. I have saved money every month since the beginning of this year to try and take advantage of some of the Black Friday Deals. The PC that I currently have is as follows
CPU: core i7 4790k
Motherboard: ASUS Maximus Hero VII
GPU: ASUS 1080 TI (upgraded from a 980 EVGA in 2017)
Corsair H100i liquid cooling
16 Gigs of RAM Corsair Vengeance
850W Corsair PSU
250 GB Samsung EVO (OS Windows 10 is located here)
1TB Seagate HDD
The problem with my current build is that when I play my favorite games such as FFXIV or Apex Legends, my computer is starting to shut off and restart. OR I will get a loud noise and my screen will freeze. So I just don't even try and open them up anymore. Even newer games that i like on steam such as gas station simulator that shouldn't use that many resources are causing this issue.
The main purpose of my build is to upgrade and future proof parts for the next 5-8 years. I will be going back to school in the fall 2022 as an older student and will be using my computer for video editing/gaming/3D and 2D animation/general tv watching web surfing.
My daughter would also like to use her computer for Blender/video editing and streaming Minecraft and Roblox. I have a spare 1070 Ti that I can use in her build because these current GPU prices are out of control
My budget is between 2K-2,500. Even If I cant get parts for myself I want to try my best and make this happen for my daughter for Christmas. She has bricked the laptop I gave her last year trying to render a project on blender.

How old is that power supply? Shutting off and restarting are symptoms of a PSU going bad. For a new rig, unless Alder lake proves to be a winner, when it comes out in a couple days, Ryzen is probably the best option.

I bought it the same year as I bought the other parts in 2015. So i have to upgrade my PSU as well then?

I was in the same boat debating which parts I should buy to upgrade a 2017 build. I ended up going with the following parts. I haven't assembled the rig yet so can't comment on the performance but it should be a beast. Based on the uses for the computer of you and your daughter I think most people are going to recommend Ryzen as it kills Intel in tasks. It also runs on less power which means less heat. I have also seen a few Youtube videos where a guy had almost this exact setup and I was surprised how many people in the comments said they were running the same setup too.

Reusing my Corsair 780T case which is no longer available.

Some people will bring up that Seasonic Prime Titanium might not work the best with a 3000 series GPU but you said you weren't upgrading the GPU anyways.

First, if you can, find out what your problem is with the current build.
If you can fix it, daughter gets a good pc.
I might suspect that your aio is going bad; they do not last forever.
Air intrudes and they need to be replaced.
Start a temperature monitor such as hwmonitor or HWinfo.
What is your temperature at idle?
It should be 10-15c. over ambient if your cooler is mounted well and functioning.
Under load, do you ever see a max of 100c?
If you do, your processor will throttle or shut off to protect itself.
A simple air cooler should do the job equally well.

NH-U14s is a good pick if you have 165mm available in your case.

A failing psu can cause strange issues.
The only way to tell is to test with a known good replacement.
You might buy the psu you will use in your upgrade build.
Look for 850w in a quality psu with a 7 to 10 year warranty.

On your future build, I think the upcoming $330 I5-12600K is going to be the go to chip for gamers.

I would argue that a Ryzen 5800x, or better, is probably going to be better for their video editing type work. The big core/little core strategy of Alder lake isn't going to multithreaded tasks as well. Apex I am not familiar with, but FFXIV doesn't take much to run smoothly. My i7 9750h, 1660ti equipped laptop plays it @ 60fps smoothly.
