Need some clarifications on VPNS

First off, when you use a vpn company or service can they see what you are sending? I know the data is encrypted but since they are the provider can they look at the data? Do they have access to your ip address? Is it possible to create your own vpn with no outside sources? Such as going from your computer to your server than to the internet. I know there are a lot questions here but I'm just trying to figure out how to best secure my data. Thank you for any help.

if it encrypted, it shouldn't matter. If you worry about even when encrypted, maybe you shouldn't use the internet at all.
