so i already have a z77 board and i need to choose between these processors :

xeon e3 1230 v2 and i7 2600

they are at the same price in my country but the xeon is more rare so it will be hard to find a used shop that sells it but the i7 2600 is everywhere
so which one should i get?

Typically Xeon processors are used for mid - low end small servers and desktops running computation tasks like video conversion.
The i7 series is much more versatile and has more instruction sets used in gaming, which is why it's more common.

My recommendation is to try and find an i7 3770. It's got better performance and should be about the same price or cheaper. If you can't, go for the 2600.

That's not correct about the xeon. The instruction sets are the same in the microcode for both processors:

The biggest differences is power and igpu as the xeon uses less power, and does not have an igpu. If you already have a gpu, this isn't a problem, but if you don't, you won't be able to boot on the xeon without one.

Thee is also a generation difference between the processors so you need to make sure you motherboard can even run the xeon. I agree that a 3770 would be better than the xeon if you're running that generation:
