For a gaming system, I would not personally recommend the X99 intels, unless you are doing other very heavy CPU tasks such as rendering etc.
In some games there is a bit of a performance increase using it, on some there is even a slight decrease, as opposed to the X79 I7 4790K, for a few reasons, including the 4790k has a higher clock speed and higher performance in tasks that cannot utilise the 5820k's cores.

With the money saved from this you could possibly watercool your video cards, if not confident doing custom loop then something like the evga 980 hybrid

Thanks for your response Benab3!

Yeah, when I was researching I found that the x79 with I74790k would offer similar performance results for less the cost... I created an x79 build and the saving was only around £100, when spending 3k on a system, this doesnt seem too much, I thought it was worth it to be using the latest platform etc?

Also is it even worth waiting for the next platform from Intel? will they be releasing any other interesting CPUs? I had a look but couldn't find much...

Yeah that is pretty much exactly the same as what I put together mate!

Core i7 4790K
Hydro CPU Cooler H100i GTX
Vengeance Pro (2x8GB) 16GB DDR3
GeForce GTX 980 SuperClocked (x2)
Maximus VII Hero
850 EVO 1TB SSD
Bluray RW BDR-209EBK
X860i Digital 860W Full Modular
Obsidian Series 650D

Wont the 4790k naturally run at higher temp than 5820k with it having intergrated graphics? Also, couldnt I just easily overclock the 5820k to match the clock speeds of 4790k?

The integrated graphics will not make a difference because it is not being used, you could maybe overclock the 5820k to 4.4 like the turbo on the 4790k but it is a very steep overclock of nearly one Ghz and all chips are different, you may get a chip that isnt so good at overclocking. Also you will be able to overclock the 4790k aswell, I have a £30 cooler and mine is at 4.6 Ghz still room for more.

Main difference between your X99 build and my X79 build is SLI titan X insteal of SLI 980, which will give you an outstanding gaming machine.
