Hi, going to rent a new server, this is going to host couple vm's ..

For the same price i can GET this:

I7 920 with 48 gb ram

I7 980x with 24 gb ram

Or

I7 4770 with 32 gb ram.



What would you have choosen? One of the servers are going to be running a 100gb innodb database

These all sound worryingly like consumer-grade hardware. If you're into large databases and the like, you should be looking at server-grade systems with ECC memory (i.e. a Xeon processor). If you're only able to get hold of consumer hardware, you need to look at systems with AMD processors which (at least up until Phenom II and possibly the FX-series but not the APUs as far as I'm aware) do have ECC-capable memory controllers. (I use an Athlon II with ECC RAM for my home server.)

As rgd1101 said, you might want to look at a bit more RAM, too. They all sound a bit small for modern VM hosts, especially if you're thinking about running a 100GB database on one.
