Question New PC build, parts overview and few questions

I am building a new gaming PC and going with 1440p monitor, I play games like valorant and wish to play games like Metro, RDR2. I am either buying from local shops or MD computers. Here is a list of parts I have short listed so far, I will be buying everything in next week. Is this powersuply good enough? Is 64 GB ram unnecessary? Should I go for cpu without graphics?

Budget is not an issue, I can spend some more money as long as I am not spending unnecessarily. My old PC is almost dead, otherwise I would have waited for next gpu launch.

For monitor I am going with either AW2723DF or XG27AQM.

(I already have keyboard, mouse and 3-4 HDD/SSDs)
 
You might want to make sure that the motherboard has the latest BIOS version on it prior to dropping in the processor. You forgot to include the cooler for the processor since it won't come with a box cooler. You should look into DDR5-6000MHz at the very least with regards to memory frequency/kits.

An iGPU is invaluable when it comes to diagnosing discrete GPU issues. I'd keep it in the list.
