To keep it under €1000, you can buy a non-K i7 (the stock cooler would be fine), an H170 motherboard and since you're not really a gamer, you could also get a less powerful GPU like a GTX 950.

Consider a Quadro!
Im using a mere old quadro 600 1GB not K600 with intel 4770 not-K processor.
I rendered using renderman and it beat the alienware 17 which was equipped with a intel 6700HQ and gtx 980M 8GB
My pc took 15min to render the scene! The alienware took around 26mins!!!!
Now just think how powerful a Quadro K2200 or K4200 would be!!!
They are expensive but totally worth it!!!!!!
