I am 3 months deep in troubleshooting this issue. It is such a wide range of issues, that isolating it is difficult for me, especially since I am a novice in pc building
Here are my specs:

Gigabyte AORUS GeForce RTX 3080 Ti
Motherboard
Gigabyte z390 AORUS PRO WIFI
G.Skill 32GB (16GB x 2) DDR4
Storage
WD_Black 1TB M.2
WD_Black 6TB HDD
WD_Black 2TB HDD
Samsung SSD 870 QVO 2TB
Power Supply
Seasonic 1000w Titanium

Windows 10 Pro
At first the issue seemed to be the graphics card, when installing Windows 10 and all the drivers, the screens would sometimes turn off randomly while gaming or watching
youtube. The only way to turn the monitors back on was to start and restart the computer. Uninstalled and reinstalled drivers, downloaded drivers from Gigabyte website and NVIDIA's and thought I was good to go. Once it happened the fourth
time, I decided to switch the GPU for my old 1080. A solid day went by with no issues whatsoever, until I hit the blue screen (with the frowny face) when I was in the middle of playing God of War. Looking at the event log I was getting 1001 and 17's I believe.
But since I am no expert in EV and looking up the possible solutions to one event ID still confuses me, I decided to check my hardware.
After literally double checking all the connections and wires on my PC and motherboard to make sure nothing was loose or broken, all while keeping my 1080 in, I contacted Microsoft support. They made me run the file integrity checker which found a corrupt file, then we checked
for Windows updates and updates for the GPU. Then they had me unistall the driver for the GPU which confused the hell out of me. Then they asked me to play some games again and see if the problem fixed itself.
2 nights went by after that with literally no issues whatsoever, so I switched my 1080 for my 3080 ti, to see if the computer would have more problems with the 3080 since it seemed stable now. 3 nights went by with no problems, which made me think
the problem was fixed. Then I got a random crash while in the middle of a game of Apex, no blue screen, no stutter, it just cut off. Looking at the event ID I figured it was just a random fluke since it was a newish error that I havent seen before.
I played Dying Light 2 max settings to see if I could replicate the problem, no problems the first few hours, but then randomly I got an app crash.
At this point this PC only crashes games while I am playing, but it runs everything else like a dream. Games like Sifu, or Lost Ark, or games that don't seem to stress the PC out have no problems at all. Also the temps while I run games like God of War or Apex Legends
or Dying Light at MAX are below avg for the CPU and GPU. 45 degrees avg for CPU, 73 degrees avg for GPU.
At this point I am not sure what else to check, Please help.

Blue screen just happened for the first time in 2 weeks while I was playing Dying Light 2. 10016, 7045, 219, 41 ,1001 were all the event ID's I received
