I want to build a new system for around $1000 (monitor and such excluded),
with a Ryzen 3600 on a X570 mother board and 32 GB of Ram.

Got most of it figured out but I'm not sure about the video card.
I will not do any gaming, just average office work, photo editing and possible some video editing.

I want to stay in the $150 - $200 range.

Suggestions and comments will be appreciated.

I think I'll go for the MSI GTX 1650 Super. It will do what I need and price is good.
Yeah sure why not. For the price, newly released RX 5500 XT is meh. You could get the 1650 Super which is $150-160 or a 55000 XT 4gb which should be 10-20$ more, and slightly better than the 1650 Super. Sits somewhere between a 1650 Super and 1660. Get the 4gb if you do get it because the 8gb variant is dud for now.

I just found this one, a bit more but seems to be worth it:
