new issue or old?
full system spec?
did something change recently?
I've already did 4 passes on memtest86, I've Uninstalled a bunch of programs just in case. I'm pretty sure it's a driver issue but I don't know how to analyze the dump file to find which driver or drivers it is. I also don't see a bug check string on any of them, not sure why.

Comment: The overclocking driver "etocdrv.sys" from EasyTune Overclock (Giga-Byte Technology Co.) was found on your system.

Comment: The overclocking driver "IOCBios2.sys" was found on your system. (Intel Extreme Tuning Utility)

BIOS info was not included in the 1st dump file. This can sometimes mean an outdated BIOS is being used.

This information can be used by others to help you. I can't help you with this. Someone else will post with more information. Please wait for additional answers. Good luck.

WHEA error at 11.02 crashed Defender? How odd.
WHEA = Windows Hardware Error Architecture. Its an error called BY CPU but not necessarily caused by it.
Can be caused by overclocking software so things like Easytune Overclock (that is loaded), INtel Extreme Overclocking Utility (which is also loaded (the last 2 drivers may be part of same program))
also caused by heat
Can be caused by any hardware
Sometimes caused by drivers.

Never seen a FAT File System error before?
mentions fastfat which is the windows 12/16/32 File system driver... Are you running any real old software? are you using a USB as ram? Readyboost?

Try updating LAN drivers - https://support.killernetworking.com/download/killer-drivers-installation-64bit/

I Uninstaller both Easy Tune and the Intel Extreme Tuning Utility and I no longer have the problem.
