Number of Case Fans and Power Supply

I'm building my first desktop PC, here are the specs:
- Gigabyte GeForce GTX 1080 Windforce OC
- samsung 850 evo 500gb 2.5-inch sata iii internal ssd
- western digital 1tb sata 6gb/s 7200 rpm 64mb cache 3.5 inch
- corsair hydro series h115i extreme performance liquid cpu cooler
- nzxt s340 mid tower computer case
- intel 7th gen intel core desktop processor i7-7700k
- kingston technology hyperx fury 2666MHz ddr4 non-ecc cl15 dimm 8gb ddr4 2400 mt/s (im getting 2x4gb)
- asus rog maximus ix hero lga1151 ddr4 dp hdmi m.2 usb 3.1 atx motherboard

How many fans and what psu?

Any 550W or greater high quality PSU will be fine. I'd go 600W+ for some future headroom if necessary.

Case fans draw very little power. Add as many as you can stand to listen to. But the case's stock fan allotment is fine as is.

With a build that nice I'd definitely get 2x8GB of 3000mhz or higher ram. 8gb is cutting it too close out the gate.

Just a small note about your fans. The ones included with the case are 3-pin type. That means they can only have their speed controlled by a mobo header that uses Voltage Control Mode (aka DC Mode). All your mobo fan headers CAN be set to use that mode in BIOS Setup, but they may be set by default to PWM Mode. So, when you get it running, check that in Setup and change it if necessary, then SAVE and EXIT to preserve the new settings.

I have a thing for Corsair Vengeance LPX but any name brand is good. At a given speed and timing memory kits should be nearly identical. That's why you see styled spreaders, LEDs, crazy high speeds as a way to differentiate brands.
