NVidia Control Panel Woes

I have overclocked both my CPU and my two graphics cards as you can see in my sig. The problem is that I can't use RivaTuner because it doesn't support the latest drivers, and YES I know you can fix that but I just don't like the idea of messing with cards using a program that doesn't fully support the driver. This leaves me with the nVidia Control Panel but the problem with this is that you have to use a profile which saves ALL the settings, including the mobo settings. So if I set up a graphics overclock, then modify my FSB in the mobo BIOS and then load the nvidia profile the control panel will override the FSB changes I just made...VERY annoying. Anyways, I'm wondering if you guys no any way around this, or other programs that I could use. I also need to be able to change the fan speed because by default the fan speed is stuck at 30%...and it doesn't scale for increasing temperatures...stupid...

So, I decided to use RivaTuner...I'll prolly edit the BIOS soon anyways. However, I also upped the fan speed to 80% but it's LOUD and I've only ever seen static fan speed changes. Does anyone know of ways to program the fan speed so that it would, say, gradually increase as temperature went up until it was at a given percentage at a given temperature? The nVidia Control Panel seemed to have an option like that but for some reason it never worked for me.
