I am wondering I have my i5 3570k currently in my build and I am wondering if I can take it out and simply place it in this new Gigabyte GA-H81N Mini itx motherboard, applying new thermal paste as I go.
you have a ivy bridge cpu and a haswell chipset mobo. you cannot pair them. i5 3570k is a capable cpu with o/c ability, best match for it would be a Z77 chipset mobo ASRock Z77E-ITX . it can work with this ASRock H77M-ITX but you will lose the o/c ability

^This. Either get the board suggested, or you will have to get a different CPU like an i5 4570 or a 1230v3.
