Outlook 2003 E-mail Issues

We have a computer that has just had all of it's software re-installed. When creating an e-mail, Outlook is automatically creating it double-spaced. I have looked at its paragraph format and it is set on single spacing. Can anyone tell me how to turn double-spacing off and how it got turned on in the first place?
