I built my computer in 2013 and many of the parts I want to upgrade to more modern pieces.
The only upgrade I have made recently has been installing a GTX 1080 which I want to build the rest of my PC around.

I will list my current specs, budget and what I use my computer for.
I don’t do much gaming at all really- just your typical League of Legends addict.
But I enjoy thinking my computer can handle whatever I choose to throw at it.
Besides playing League, I use my computer for accounting work. That’s it; League and accounting work. But again I’d like to know my computer can do more if I want it to. I very occasionally will play GTAV.
I’ve heard SSD’s are superior to hard drives or something now? Would like to switch over to those as well.

Budget for rebuild: $2000

Current specs:

Processor: i7-4820K
Memory: 32GB 8GB x4 DDR3-1600
GPU: GTX 1080
Motherboard: MSI X79A GD45 Plus
Power Supply: 750 Watts Corsair 750M Modular supply
Primary hard drive: 2TB 64M Cache 7200 RPM 6GB/s single drive
Data hard drive: 1TB 32M Cache 7200RPM 6 GB/s single drive
Optical Drive: 24x Dual Format/Double Layer DVDR/ RW + RW Drive
Sound Card: Creative Labs Sound Blaster X-Fi Xtreme Audio 7.1 Channels 96KHz/24 bit
Network Card: Onboard LAN Network
Operating System: Windows 8.1 Pro

Would really appreciate it and maybe/hopefully you guys will enjoy rebuilding my computer for me.

Solution
For your workload and what you expect from the rig, your current pc is good enough. I would suggest that you add a Samsung SSD and you should be good for a couple of years more. No point wasting money when you are not into hardcore workload(gaming or otherwise).

But in case, that doesnt satisfy you, here is what you can do...

CPU: Intel - Core i7-8700K 3.7GHz 6-Core Processor ($388.89 @ B&H)

Reuse the storage drives and optical drives and that will complete a pretty powerful setup.
