Let me throw out a couple ideas. Borrow a known good working video card similar to your 3070 - just about anything in that 3xxx range, or even a 2xxx or 10xx and see if using that card solves or helps with the problem. That nv----- error code points to the drivers, but the card might actually be dying. Some of the other info. you posted also suggests this.
Secondly: having gone through a similar problem about a year ago, borrow a known good working power supply and run that for a few days.
I offer these suggestions as a little over a year ago I spent a couple months trying to track down the same type problem, only to find that my PSU had finally reached the end of life and replacing it solved the problems. The PSU failing had also caused some corruption in one of my games and a couple programs.
