Question PC shuts down and fans race, but only when running specific softwares ?

I work as a professional video editor and have been having an issue with my desktop. I installed a Ryzen 9 5900x back in December of 2022. Since then, I have had a frustrating problem where when I utilize certain softwares, my desktop shuts off its screens and all fans go full rpm. It will not restart unless I manually shut off the PSU and restart the entire machine. This has occurred during random usage of Adobe Premiere, the last level in the game Hitman 3, and after 20 minutes of playing the game Red Dead Redemption 2. The only way I can re-create this crash consistently is with the final level in Hitman 3. The other two softwares are not consistent enough. This does not occur with other softwares other than these (that I've found).

Here is the list of things I have tried already to diagnose.

-Ran a single-core and multi-core cinebench test. No crash in either

-Replaced my PSU with a new Corsair RM850x. Still crashes during final Hitman 3 level.

-Re-seated my CPU. Still crashes during final Hitman 3 level.

-Re-seated both sticks of RAM. Also ran game with one of each seated to see if it was a memory problem. Still crashes during final Hitman 3 level.

-Replaced my RTX 2070 with a new RTX 2080 SUPER. Still crashes during final Hitman 3 level.

-Updated BIOS and all graphics drivers. Still crashes during final Hitman 3 level.

-Dusted and cleaned inside of case. Still crashes during final Hitman 3 level.

I am hoping to at the very least diagnose what is wrong with it, if not fix it altogether. Keeping track of temps, I am noticing a consistent 80-85 Celsius while the CPU is working hard. 44-54 Celsius at Idle. I thought it may be an overheating issue, but other games/softwares that I use on the regular are more strenuous than the 3 that cause the full crash and the desktop has no issues with them.

I desperately need to use this machine confidently for video editing work again, so these crashes need to be resolved. Please let me know your thoughts!

CPU: AMD Ryzen 9 5900X 12-Core Processor 3.70 GHz

GPU: RTX 2080 Super

MB: X470 GAMING PRO (MS-7B79)

RAM: 16GB Ripjaws DDR4 (8GB a piece)

SSD: 1 256g and 1 1tb

HDD: 2 1TB

PSU: Corsair RM850x (new)

Fastest and easiest fix: format OS drive and make a clean Win installation. This will get rid of all software issues, including bloatware and malware (except rootkits).

As of what the issue might be, i'm thinking software (drivers) conflict. Finding it is like finding a needle in a big haystack, hence why wiping it and starting fresh is easiest and fastest.

For added redundancy, don't game on your machine once you've started fresh.

Hardware wise, it could be issue with your CPU. But it would be hard to diagnose and expensive to replace.

Found my solution! Apparently the Ryzen 9’s “auto” option for OC in bios means that it will automatically push its threads past the 3.7Gh limit. I noticed that even at idle, it was pushing 4.2.
Even though I never told it to OC, it was doing it anyways and overheating itself on these softwares that enjoy using single-threads.

I manually went in to force 3.7gh only and it seems to have fixed this issue for now.
