Plethora of bizzare PC issues - what am I doing wrong?

Fun fact: I cannot seem to reopen the software after opening it.
I also just had another strange system freeze and reinstalling the software I get this error message...

The voltages all look good (even though software is inaccurate and can't be trusted too too well).

No idea what it might be? I'm literally stumped for suggestions.
It seems to have a pattern: I boot up, one of the fans (I think GPU) makes a lot of noise, CPU sounds quiet, my desktop loads, I try to open something and the whole thing freezes up/crashes.
I force restart, the GPU(?) buzz has stopped and the CPU makes a little more noise. It takes a little longer to boot up but works - few odd freezes here and there.

What is going on, I beg of you.

Bought a new power supply and CPU cooler and all my issues are fixed. Case closed!
