This is my build (what I'm going to buy in the next month) gtx 1070, ryzen 5 2600, 16 gb ram, 3 fans, 1tb hdd, and 500 gb ssd. Now I'm not sure what psu i need, pcpartpicker gives a rough estimate of the power the parts I have take up (~380W, I have no idea how accurate that is) but I was originally thinking of getting the corsair cx550w psu but i just want a second opinion and I'm not even sure if that's enough. I do plan on overclocking down the road (gpu and cpu)

Solution
550 Watts will be more then enough for your system, and the CX550 isn't bad but I would spend a little more and get something like the Corsair TX, Seasonic FOCUS or EVGA G2/G3 models for your system especially if you are going to overclock.. The Seasonics FOCUS are really popular right now and very competitively priced.
