Question Random hard resets regardless of OS

Recently, I cleaned up all the cables on my desktop. Just rerouted everything, zip tied excess cable, etc. I additionally connected my case's audio and USB-C cables to the correct headers, and flipped my CPU fan because it was actually in the wrong direction (oopsies).

However, immediately after that, my PC has begun hard-resetting at random. No reboot screen or anything, just hard reset as if I pressed the reset button.

This happens on both Linux and Windows. I found the easiest way to consistently cause this crash is to run the OCCT CPU Stress test, but this will sometimes occur at random on either OS as I'm going about my tasks.

I've done a LOT of things to isolate it, but have no leads as of yet. Here's what I've done:
- unplugged audio, USB-C, USB-3.0 headers individually
- unplugged reset switch, power switch, HDD LED, and power LED headers
- unplugged all SATA drives
- reseating RAM
- running MemTest86+ (results were GOOD)
- unplugging GPU, running integrated graphics
- switching to direct wall connection vs. power strip

None of these had any effect whatsoever. So that leaves a few potential causes, but none of them make any sense to me.

Temperature: temperatures were low during the crashes, <50C. I also tried running a different stress test on Linux, temps rose to 80C, no crash. Few minutes later, temps at 50C and it crashes. This seems unlikely.

Power Supply: similarly, during these crashes, the TDP of the CPU and GPU combined is <50W total. I have a 750W PSU that's less than a year old, I can't see how it could possibly fail, and I can't afford a new one in the slightest nor do I know anyone to borrow from.

CPU: I'm running a <1yo Ryzen 7 7800X3D. I can't see how it could fail when it's this young. Similarly I have no spare AM5 CPUs nor anyone who has one.

I'm at a total loss, and I have some urgent work I need to get done before Christmas. Please help ASAP!!!!
 
Ugh, looks like I accidentally enabled PBO at some point. Oops. I disabled that and have no more crashes even during stress tests.
