After booting from the ssd, I would still be able to access the data in my HDD right? and should I unplug my HDD during the process ? thanks

Right.

....and when you go to install the OS.....only have the SSD connected.....leave the HDD unhooked.

Once you get it up and running....power down and connect the HDD.

Correct. Data not being most programs. Programs (Games) that use launcher apps(Stream, Origin...) usually just need to have the launcher reinstalled and then add the location of the game folder on the old drive added to the library.
