i'm trying not to live in the last decade by running a xeon processor using raid 5. I want to run win 2008 server on a ryzen processor. i'm curious if or why ryzen supports windows server, or not. I want to use m.2 not raid 5, but I want to realtime mirror this to a sata ssd or hdd. i'm wondering if these new technologies are available, how will I be able to use them for the tasks that I need

OS support does not really have to do with the CPU but the motherboard. Look up some motherboards for the Ryzen and see what OS support they have. If there is Vista support, then it should work with 2008 server. Realtime mirror is raid 1 disk to disk where same thing is written to two drives. Best thing for that is to use two identical drives since the whole point of the mirror is to recover the system fast when a disk fails, so you swap it in for the failed one and keep going.
