ReBuild i7-6700K vs i7-6800K

My main desktop is used as a plex media server. It also runs sickbeard, couchpotato, and Sabnzbd. I occasionally edit photos with photoshop and am looking to put together some home videos with a basic editing program (something like imovie for pc). Otherwise it is used for web browsing sometimes and some word processing. I have had trouble with my current build ever since I built it. It is running relatively stable now although it does lag/lockup randomly sometimes. When I first built it, it would black screen and completely lockup all the time. It couldn't last more than a couple of minutes with a stress test. All parts tested okay. The only way I have gotten it to be pretty stable is actually underclocking it.

Here is a list of my current build:
AMD 9590 4.7GHz 8 core, underclocked to 4.2GHz
Gigabyte 990-FXA-UD5 (most current bios)
2x G.Skill RipJaws DDR3 1866 4GB
2x Kingston Hyper Genesis DDR3 1600 4GB
NVIDIA GeForce GT610 (I know this is a basic graphics card, I believe Plex is more pc based for transcoding, and it doesn't do too bad for photoshop editing, as I believe only certain actions put more stress on the graphics card) - Please correct me if I am wrong
Corsair Hydro Series H110i GT Cooler, along with the 2 front and 1 back fan with the case
Corsair Obsidian 750D ATX Full Tower
LEPA G800 MaxGold 800W Power Supply
Hard Drives: 3 basic hard drives, a TB drive with operating system, software; a 3TB and 4TB drive with movies/tv shows

I am looking to move to Intel, I am a little fed up with this AMD processor, my sister has almost the exact same build (only different graphics card) and she has more freezing problems for some reason than I do. I have a feeling that if I upgrade she'll try to have me duplicate the build for her.

- CPU: I was thinking about either the i7 6700K or i7 6800K, I'm open to other ideas, although the price point of the 6800K is probably the most I want to spend
- Motherboard: I have seen people recommend the Asus Z170 Motherboard, but I noticed there seem to be quite a few choices with that motherboard with some big price differences. I'm not sure what the differences are. I have not overclocked anything before but I may be interested in researching it and trying it.
- Memory: to my knowledge I would have to upgrade to DDR4 memory for either of these chips. I was glancing at the 2x G. Skills Ripjaws 8GB DDR4 3200 (so it would be 16GB memory total, I believe this is sufficient for my needs. Let me know if this should be sufficient or any other recommendations)
- Case/Cooler: I plan to keep my Obsidian 750D and Corsair H110i GT
- Graphics: I know my current graphics card is basic. Do you think this is a real problem? I don't do any gaming, and I don't think that the software I use really uses the graphics card. Am I mistaken. I'm open to suggestions, I glanced at the GeForce GTX 970. I might be able to swing a new graphics card, just not sure yet.
- Power Supply: Planning on using my current LEPA G800M MaxGold
- Hard Drive: My drive storage is getting full. I am hoping to upgrade to a SSD drive, use that for operating system/ Software, then keep my existing drives for storage. I probably won't last long before I'll need one more drive for storage. I was looking at the Samsung SM951 NVMe M.2 512GB (I probably could get away with the 256GB, is it worth it to go ahead with a 512GB. I'm not very familiar with the best SSD, is this one good, or any recommendations?)

Please let know your thoughts/suggestions. Do you think I will see a performance increase and decrease in freezing/bugs? I'm having trouble spending this much to redo the computer again, although I think I'll be really happy with a new system. I think maybe the 6700K would be better for my purpose because it has better single and dual core performance. To my knowledge Plex can utilize multiple cores but that is only when transcoding multiple things at once. I believe that the first transcoding only utilizes one core, then next thing transcoding can utilize another core, and so on. It can be common for us to have more than 1 thing transcoding at a time. Most common if more than one would be two things transcoding at once, although not impossible to have 3 or 4 things transcoding at once.

I'm open to any suggestions.

Solution
Just go with the 6700k. It absolutely destroys the FX9590 is performance and would be rock solid stable. You'll be pleased with the difference.
