If you do only gaming, 8gb will be perfectly alright.
If you game and stream videos or browse wikis at the same time on chrome, you'll need 12-16gb of memory
Just close chrome and other random programs and you'll be fine...
8 GB will get you through another year or so, 12 GB will be slightly future-proof and will last you about 3-4 years, as for 16 GB, that's more than enough to be future-proof till a long time (maybe 10 years, can't calculate how demanding games will get though 😛)
Depends mostly on games but any game that suggests 8GB minimum would most probably work better and/or more fluent with 16GB of RAM specially in dual channel mode.

12 and 16 would be good. I had 8GB RAM and FF15 was using 7500-7800 of the 8000 available RAM. Added 8 more Gigs and RAM usage went to 8300/16000. So i would assume newer game would use more than 8GB RAM now.
