TLDR;
refresh rate kept changing from 144 to 60 during daily usage, downloaded display driver uninstall, removed ONLY graphics drivers, reinstalled latest drivers,
now it's fixed, unsure if it's only a temporary fix or not. if you have the same issue feel free to contribute anything you've found.

(update) i haven't done anything but the issue has stopped, assuming it's only temporary i'm gonna keep this thread up incase it ends up happening again

(update 2 with more clarity and potential fix)
it didn't stop happening, i just didn't notice the change from 144hz-60hz while watching yt, whenever i changed the refresh rate
from 60-144 it just changed back to 60 and i didn't really notice; i downloaded display driver uninstaller, and completely reinstalled gpu drivers and it's fixed for now
link for display driver uninstaller below, you can search up "ddu uninstaller" on google and find it from guru3d.com if you don't trust random links.

i've been experiencing something with my monitors while alt tabbing while gaming (valorant), i have two monitors 2560x1440 144hz (main) 1920x1080 75hz (secondary),
i'll link a yt video of what's happening at the bottom but if you would rather not click it whenever i alt tab, my main screen goes completely black
switches to 60hz while i'm on something that isn't my game, then once i click on the game, the big black screen comes back for a moment, then it
switches back to 144hz. (video shows me alt tabbing, and the refresh rate changing on its own)

Your platform's motherboard is pending BIOS updates, I count two newer BIOS versions apart from the one you're on now. As for your system, did you make sure you used DDU to uninstall your GPU drivers and manually reinstalled the latest driver in an elevated command, i.e, Right click installer>Run as Administrator? As for your OS, you're pending updates as well, we're on version 21H2 for Windows 10(at the time of writing).

You forgot to mention the make and model of your PSU. Make and model of both monitors and how they're tethered to your GPU?
