I have a old Late 2008 MacBook Pro (unibody) and the internal display doesn't work so I plugged it into a monitor and it works fine. However, I was wondering can I just remove the internal display then? LIke disconnect the cable to the motherboard and remove the entire top cover of the laptop? I don't plan on taking it anywhere and plan on using it as sort of like a desktop with an external monitor, so will macOS still boot up when it doesn't detect the internal display? (I am running OS X Yosemite).

Yes, it should work headless. Plus, by removing the display. The macbook will no longer see it as being connected. That way you don't run into an issue where it tries to boot off the internal display. It should just use the external by default.
