Replace optcal drive with a second Hard Drive?

Yes, assuming both use SATA, you certainly can buy any SATA hard drive to replace the optical drive that is currently using that SATA port on the motherboard.

It looks like they both do. In fact it looks like there are 4 SATA plugs on the MB.
The power supply only has (and can probably only handle) 2 drive connections though. Am I correct in assuming I can only attach a max of two drives with this PS? (Aside from the case size limits)

Lastly, is there a drive harness or something I would need to mount a HD in place of an optical drive? Or do I need to get creative?

I have a Dell Inspiron 12 model 3521 with only a 500GB hard drive plus I now have a pile of 2.5" notebook size smaller SATA drives. However despite having a number of small external USB connected cases for them with neat adapters whilst checking for more offers of the exact same Dell model notebook on ebay.com I spotted an interesting looking item billed as

on sale from Hong Kong for a mere $11.98 plus 99 cents postage at that price and as it actually quoted my notebook model number it was irresistible.
(I also have several external (USB) DVD/CD Burners one of which can burn Blue Ray discs) so I figured that it would not be a problem to use one in lieu of the built in burner.
it arrived quickly by mail and it only required the removal of a single screw to release the optical drive then the fitting of a drive into the caddy was easy and it slid easily into place and worked first time.
Of course I was lucky in so quickly finding an auction that quoted my machine's model number
One thought I am working on is to fit into the caddy one of a couple of 128GB Solid State Drives
I won on Ebay for $55.00 each. one to allow me to use XP (offline of course) for a particular program that will not run on 7 or 8. The other to be Windows 8 to hopefully endow a more rapid on/off response
I think that by pressing F12 during restarting I can then choose which of the two fitted drives to boot from
