Replacing a PSU

I'm about to replace my PSU while watching a tutorial and in the video he mentions to unplug everything from your motherboard without giving me a reason. I'd just like to understsnd why he's doing this. Also I'm worried about unplugging my primary SSD with Windows, will this affect anything when I boot it up again?
 
Solution
No it won't.

You have to remove all of the power cables from the system before putting in the new PSU.

Then use the new ones that came with the new PSU.
