Question Review/recommendations on new desktop build

Hi, I'm planning to upgrade my extremely old desktop (currently doing everything on laptop so desktop was a low priority due to moving/travelling).

Here's what I put together so far:
CPU Intel Core i7 12700KF
GPU SAPPHIRE PULSE Radeon RX 6400 GAMING 4G
MB ASUS PRIME H610M-A WIFI D4
Memory Kingston SO-DIMM FURY 32GB KIT DDR4 3200MHz CL20 Impact
Source Seasonic B12 BC-650 Bronze
SSD Samsung 990 PRO 1TB

Case, soundcard, HHDs, and case fans I'll be using from the current setup. I'm debating whether to also keep "SSD 250 GB Samsung 860 EVO SATA III" which I use only for OS. I'm trying to keep the price down.

The main use is going to be photo editing, occasional gaming but no need to play the latest games as I have PS5 for that. I plan to use Win10, I have no need/desire to use Win11

Is there anything you'd change? I appreciate all tips and advices. I used to build PCs but that was almost 20 years ago and I've been out of this world for way too long.

What's the reason to go with AMD over Intel? Any specific model?

I'm trying to keep the price down, I don't think I need 2TB SSD. I have 4TB HDDs + 6TBs external discs and it's more than I need at the moment. The idea is to have 1TB for OS, one or two games, and Lightroom for editing.
 
No reason not to continue to use a 250 gb 860 EVO if it meets a need. Why not? Speed differences among SSDs not a big deal if you are trying to save money.

You might even choose something other than Samsung 990 Pro to save a few dollars.....Crucial, Western Digital, another Samsung.

Many would tell you to get a K rather than a KF processor so you would have backup graphics capability if your video card misbehaves.

AMD Ryzen 5 5600X (downgrade to i7 but much cheaper and I'm trying to keep the price down)
ASUS TUF GAMING B550-PLUS WIFI II (wifi is nice to have and doesn't increase the price by that much)
Kingston FURY 32GB KIT DDR4 3200MHz CL16 Beast Black (thank you for spotting the so-dimm, completely overlooked that)

Located in Alberta, CA.
