Even a USB 3.1 Gen2 enclosure would bottleneck the drive as it can get up to 16Gbit/s reads while USB 3.1 Gen2 runs up to 10 Gbit/s. Even so any enclosure I can find for M.2 drives is a SATA USB 3.0 one which runs at half that speed meaning the drive would be limited to roughly 1/3 of what it can do, at which point you're at SATA speeds anyway.
For external SSD storage you're best off with one of the existing external SATA SSDs.
