Should I get a 128gb ssd or a 250gb ssd?

If NOTHING else then get the 128 of the two but if you plan on putting anything on it trust me 128 is a mistake, one I know from personal experience

240-256GB SSDs are usually a fair bit faster than 100-128GB ones thanks to the 200+GB ones having more chip-level concurrency and you also get more write endurance on top of the extra space to install your most frequently used software and games.

Trying to keep it 'only the OS' is tossing away 1/2 the functionality of an SSD.

The OS and most or all of your applications. Apart from games, that will probably be ALL of your applications.
Then, maybe a game or two.
Other stuff goes on other drives.
