Should I use Displayport

I have the Asus mx279 and r9 390

Will connecting via hdmi to hdmi/display port adapter give me any better quality than just hdmi to hdmi?

it depends on the resolution, refresh rate and monitor used

on normal circumstances you can't tell the difference between hdmi and displayport

on certain circumstances you do need displayport, it al depends on your needs and hardware you have
 
Generally it's better to not use adapters. A lot of display or compatibility issues are adapter related. Also sometimes image quality gets affected by display adapters. Whenever you have the option, you should better use HDMI to HDMI or displayport to displayport cables and avoid adapters all together.
 
An adaptor is not going to change the display quality. If your GPU outputs at the limits of the HDMI spec, adding a port converting adaptor doesn't magically increase the bandwidth or quality of the display signal. Displayport will support monitors with 4K resolution and 144Hz refresh. While, HDMI maxes out at 4K resolution and 120Hz refresh. If your monitor is less than this, HDMI or displayport is going to provide identical display quality.
