I'm currently using a single channel configuration with one 8 gig and one 2 gig stick. Would switching to two 4 gig sticks help me get more performance in games?

I'm currently using an i7 2600 and a gtx 1050 ti.

On an older Intel platform, it's unlikely to make any real noticeable difference.

What titles are you struggling with? A 2600 + 1050TI should net pretty respectable performance, even in 2019 -- assuming you're reasonable with your expectations, of course.

I'm struggling a bit with some newer titles like Monster Hunter World and AC:Odyssey but I noticed that in some YouTube videos that changing to dual channel memory made a large difference.

I would not expect a large difference on that platform, no. On a modern AMD system, certainly. A 2600 would likely see some benefit, but it's not likely to be worth the cost/hassle, honestly.

What kind of resolution/in-game settings are you trying to run?
With a 1050TI, AC Odyssey is going to be a 1080p/Medium title at best - that should net you 30+FPS.
1080p/Low for a near 60FPS experience.
