Is it possible to setup an Aorus Gtx 1080ti Extreme Edition with an Aorus Gtx 1080 ti (non Extreme Edition) in Sli?

Solution
yes. the nvidia driver will just down clock one or the other card to the slower clocked version. Then select to run both GPU's in SLI, or whatever the setting is and you should be good to go.
I have a Strix gtx 1080 Ti oc Edition and a Strix gtx 1080 ti (non-oc Edition) in Sli, Ryzen 1700 build at 3.8ghz and 16gb ddr4 @ 3200. Keep getting crashes in games/3dmark. Not sure if it’s because of memory instability or the differences in the cards (though minor). Even manually set cards to same clocks/ synced both together, went into driver settings, everything. Can’t figure it out. Just a heads up. If anyone knows a solution, I’m all ears!

You should really post this in a new thread.

Anyway, you have the Ryzen OC, which is most likely the cause of the crashes. It could be the mem. Use memtest86+ and test the ram. Let it do a few passes. If there are no errors then the mem is working fine.

For the CPU run Prime 95 (small fft's) Ideally you need to run it for an extended period 1hr for first test will do. If you have any errors then your CPU is not stable. If the temps go over 80c you need to back off the OC and get it stable.

Use something like HWMon to monitor your system whilst you are doing the testing, so you can see the temps.

finally, your system is well capable with even one GPU. Take one of them out. Do you still have the same crashes then? If so, it points to CPU/Ram.
