The Corsair Spec-02 hdd cage has 3 3.5' bays, and 2 2.5' bays. However, between the top of the cage and the bottom of the 2 5.25' bays there is a lot of empty space. Does anyone know where I could get either some brackets, or a full replacement cage, that would let me put a couple more 3.5' drives in this space?

Corsair does sell the HDD cage separately for their cases that have modular HDD cages,

Note: that HDD case may be too tall to fit into the available space you have.
I measured mine (since i have 760T v2 Black and 750D AF Edition cases) and it's dimensions are: height 120mm, width 125mm, depth 140mm (with drive brackets in it, depth is 170mm).

Either that or get a 5.25" to 3.5"/2.5" conversion bracket,

I have been looking at those 5.25' to 3.5' converters, but I'd have to take out either my blu-ray drive or my sd card reader.

As for the the corsair upgrade kit - doesn't matter if it will fit or not because every site I can find that lists it shows it as out of stock. - except for this one seller on amazon who has bumped the price up to $60

It looks like the stock hdd cage should be easy enough to take out, if I can just find something that will fit in the same space.

A good looking case.

I can see a couple of possible problems.
  1. If you have a long graphics card, a added drive cage may impact it. Measure carefully.
  2. A second cage fully populated is going to impact your cooling airflow.

What to do?
  1. Use larger hard drives, sata units can be as large as 16tb.
  2. If you are using a ssd for windows, a 2.5" ssd can be placed anywhere freeing up space for another HDD.
  3. Buy a case with more HDD storage capabilities.

Ihave 2 of these
Even though there is 2x 5.25 you could put ssd's up there.

There is good space on the back side of the mobo tray also.

In 1 of mine I have a ssd laying on top of the hard cage i could velcro it.
I have a corsair h110i 280mm rads on both cases up top with room to do a push/ pull.
My zotac gtx 1070 ti is every bit as wide as the asus rog strix x470 f gaming atx it is on
There is plenty of room good cable management and good cooling options.
I have 1x140mm back as exhaust, 2x140mm 280mm rad fans as exhaust up top,
2x 140mm front as intake 1x140mm bottom between psu and hdd cage.
