SSD to HDD question

I have a Samsung EVO 860 1TB (has my os some games editing etc.) Im transfering video files chunks about 2.5gb each to a 5TB WD HDD 7200RPM (Ryzen 1800x w/ 32GB 3200mhz ram)

When i start the transfer its about ~450 MB/S transfer speed and after about 10s it drops to 55-60
Is that normal ive only noticed it with the larger files and my flashdrive peaks almost 900 mb/s transfer write speed when i put some small stuff in and when i transfer to my bigger 64gb stick its doing the same thing as the SSD > HDD thing.

Any thoughts?

And no its not raid i dont know how to set that up or what the benefits are of it.
 
Solution
Speed relies on the speed of the slowest device in the chain.

The SSD can output fast. The HDD can accept at a slower speed.
Initially, fast. Once the cache space on the HDD fills up....slow(er).
