How much power do I need to run this system?

  1. AMD Ryzen 7 9800X3D
  2. Asus TUF Gaming B850-Plus WiFi Bundle

Well that comes up with 600-699, but doesn't account for fans, pumps, etc. Not a bad estimate, but you generally want to keep the PSU at around a 50 - 80% load, so a 750W easily fills that requirement. PSUs also age over time and can deliver less than their ratings as the years go on.

Other calculators similarly leave off fans, pumps, and also over estimate power requirements for things like memory and motherboards.

Mind that is 100% CPU and GPU usage. You generally won't experience that outside of benchmarking.
GPUs can easily pull 100% of their rating though, and more on occasion.

Your first concern is to buy a quality psu. A 7 year warranty or better
is usually good quality.
Graphics cards can have some very high power demand spikes well above the nominal draw.
The 750-850w might be right, but 950w will allow the psu to loaf and be quieter, running in the middle third of it's range.
