Where exactly does the data and information come from when you run restore? Is there a special location for that information?

There is a hidden folder "System Volume Information". It contains all the restore points and necessary files to restore your system to earlier point in time.

Windows does create a copy of important files in certain point of time like installing new software. Usually you have at least few of those, mostly taking all free space you have. Windows just copy-paste old versions of those files from hidden folder/partition into correct folders.
